About Trent Whelan

Trent grew up in the picturesque Yarra Valley with a large Italian farming community. "From this, I took on tradition and was taught the grounding of what's most important about being a chef", says Trent. "My philosophy is simple: I cook with passion and love, working with the best seasonal produce and being able to show off what great flavours can be achieved."

Trent commenced his career within Melbourne hotel circles, with his first qualified role at Grand Hyatt Melbourne. A desire for international experience then saw Trent take to the seas with Disney Cruise Lines in Florida, America. Upon his return to Australia Trent accepted the role of Sous Chef with the award winning Angsana Spa and Resort in Palm Cove, Queensland.

In 2001 Trent took on his first Head Chef role working with the ALH Group, one of Australia's largest licensed venue management groups. For the following seven years Trent worked as Head Chef in a variety of ALH venues, applying his experience and expertise in menu development, team building and staff training.

With a desire to own and operate his own businesses, Trent then opened Brewhouse Café, Industrie Café and a corporate catering company. This career move allowed Trent to follow his passion for sustainable and local ingredients, building relationships with boutique suppliers.

In 2016 an opportunity with Accor saw Trent return to the Hotel scene where he worked as Executive Chef at Quay West Suites Melbourne, before accepting his current role at Novotel Melbourne South Wharf.

Bringing 25 years of passionate Italian cooking to Novotel Melbourne South Wharf, Trent has curated a menu of rustic and seasonal Italian dishes; sourced from a hand selected group of market growers and premium local suppliers. With signature menu items including a Salumi bar, homemade pizza and pasta dishes, antipasti, curated cheese selection and traditional layered desserts, Mr Carpano Dining + Bar evokes "Melbourne Italian, Made True".
