Ingredients
For 4 people
- 4 tablespoon(s) olive oil
- 1 large Mango, sliced
- 1 lemon, juice and rind finely grated
- 2 60g punnet Flowerdale Farm Sunflower shoots
- 50 grams roasted unsalted cashew nuts (if desired)
- 1 pinch of sea salt and freshly cracked pepper
- 2 chicken breast fillet
Method
- Slice chicken fillets into 2cm thick strips. Season generously.
- Heat oil in non-stick frying pan and stir-fry until golden and cooked through.
- Mix olive oil, juice and rind of 1 lemon. Assemble sunflower shoots, fried chicken and mango slices among four plates and drizzle with lemon dressing.
- Sprinkle with freshly cracked pepper and cashews, if desired.
