Frisee and Red Witlof Salad with Citrus Dressing

For 4 people

  • 3 tablespoon(s) Mirin
  • 8 ripe red cherry tomatoes, halved
  • 0.5 teaspoon(s) of finely minced ginger
  • 1 large orange, peeled and sliced into 1cm thick segments
  • 1 teaspoon(s) finely grated palm sugar
  • 1 Lime's worth of lime juice
  • 1 Flowerdale Farm Red Witlof, leaves separated
  • 80 grams Flowerdale Farm Frisee lettuce leaves
  • 1 shallot, diced very finely
  • 2 tablespoon(s) balsamic vinegar
  • 1 clove garlic, finely minced

Adjust Quantity


  1. To make the dressing, combine all ingredients well until sugar is dissolved.
  2. Lightly toss frisee and witlof leaves in a large bowl together with desired quantity of dressing.
  3. Toss through orange segments and cherry tomatoes, then assemble amongst four bowls and serve immediately.
