Mache Salad with Croutons, Radish and Feta

  • 0.25 cup(s) red wine vinegar
  • 200 grams packet Flowerdale Farm Mache Rosettes, plugs removed
  • 2 tablespoon(s) olive oil
  • 8 Flowerdale Farm French Breakfast Radishes, thinly sliced
  • 1 tablespoon(s) wholegrain mustard
  • 1 pinch(es) salt and freshly cracked pepper to taste
  • 1 teaspoon(s) sugar
  • 0.5 cup(s) crushed walnuts
  • 150 grams Danish feta, crumbled

Adjust Quantity


  1. Combine red wine vinegar and sugar in a small bowl and stir until dissolved.
  2. Add radish slices and sit to marinate for 30 minutes. Remove radishes from the vinegar and whisk together the vinegar mixture, mustard, oil and salt and pepper.
  3. In a large bowl toss the mache, radish slices and walnuts with the vinegar dressing until lightly coated and well combined.
  4. Assemble the salad on a serving plate with the croutons and crumbled feta, and serve immediately.
