Princes Court Cocktail

A lavender & gin cocktail created by Waterslide Bar Southgate for Good Food Blooms 2015

  • 50 mL Tanqueray gin
  • 25 mL Whole lemon juice
  • 15 mL Lavender syrup created from
  • 80 grams Dried lavender buds
  • 4 liter(s) Sugar syrup

Adjust Quantity


  1. For the lavender syrup: Add dried lavender buds and sugar syrup to a pot over medium heat and lightly simmer for ten minutes. Strain and bottle for use.
  2. For the cockatil: Combine gin, lemon juice and lavender syrup in a cocktail shaker over ice.  Shake and strain into a highball glass filled with fresh ice.  Top with soda water. Garnish with a lemon twist, lemon thyme and fresh lavender buds.
