  • 500 grams Passionfruit Puree
  • 50 grams Sugar
  • 4 grams Gelatine
  • 500 grams Raspberry Puree

  • 1 Pineapple
  • 1 Honey Dew Melon
  • 1 Rock Melon
  • 1 Green Apple
  • 200 mL Pear Juice
  • 200 mL Lemon Juice
  • 1 Kiwi Fruit per serve
  • 2 Strawberries per serve
  • 1 tablespoon(s) Mascarpone per serve
  • 3 Half Strawberries additional per serve
  • 3 Raspberries per serve
  • 5 Blueberries per serve
  • 1 Passionfruit per serve
  • 1 pinch(es) Bee Pollen per serve
  • 1 pinch(es) Wild Orange and Cacao Crumble per serve
  • 1 pinch(es) Freeze Dry Fruit (optional)
  • 1 handful(s) Flowerdale Farm Edible Flowers

Method

  1. Pasionfruit Jelly: Soak 4g of gelatin in 20g of cold water. Cook 500g passionfruit puree and 50g sugar together in a pot up to 60C or until the sugar is dissolved. Cool down the mixture to 45C and add the gelatin, stir well and set in silicon mold. Freeze and unmold when ready.
  2. Raspberry Fruit Jelly: Soak 4g of gelatin in 20g of cold water. Cook 500g raspberry puree and 50g sugar together in a pot up to 60C or until the sugar is dissolved. Cool down the mixture to 45C and add the gelatin, stir well and set in silicon mold. Freeze and unmold when ready.
  3. Fruit Salad: Take a pineapple, honey dew melon, rock melon and green apple and cut the fruit into 5mm cubes. Put the cubed fruit in a bowl with pear and lemon juice.
  4. To Serve: Cut one slice of watermelon 2.5cm thick, trim the skin and place on plate. In a bowl add 1 chef spoon of fruit salad, 1 kiwi and 2 strawberries cut the same size as the fruit salad. Mix well. Put the mixed fruit on the watermelon. Add 1 table spoon of mascarpone and 1 chef spoon of wild orange and cacao crumble. Add 4 jellies of different flavor (2 of each flavor). Add 3 half strawberries, 3 raspberries, 5 blueberries, 1 passionfruit. Sprinkle with bee pollen, freeze dry fruit and Flowerdale Farm edible flowers.
