Ingredients
For 4 people
- 2 125 g punnets of Flowerdale Farm Gourmet Mix
- 1 tablespoon(s) olive oil
- 0.5 red onion, finely sliced
- 1 tablespoon(s) balsamic vinegar
- 400 grams tin of red lentils, drained and rinsed
- 1 tablespoon(s) wholegrain mustard
- 400 grams tin of chickpeas, drained and rinsed
- 300 grams tempeh, cut into strips
- 0.5 cucumber, sliced into thin strips
- 1 cup(s) Flowerdale Farm Continental Parsley leaves
Method
- In a lightly oiled fry pan, sauté the tempeh until golden on edges and warmed through. In a large salad bowl, gently toss together, gourmet mix, cucumber, chickpeas, lentils, onion, parsley and tempeh.
- In a separate glass, mix the vinegar, olive oil and mustard.
- Gently toss dressing through salad and serve immediately.
