native celeryAppearance: Bright green thick stemmed herb with a similar appearance to European Celery

Flavour: Stems impart a strong peppery flavour. Taste is reminiscent of European Celery, but much more intense.

Applications: Native Celery is excellent in soups, with seafood and in dressings for salads. Add to white sauces and flavoured butter for a unique finish to dishes. Stems may be enjoyed fresh or blanched.

Complements: Chicken, seafood, steak, tofu, miso, spinach, seaweed, garlic and turmeric

Trends: Bennelong Restaurant Sydney is serving Roasted John Dory on the Bone, with White Turnips, Umami Butter, Native Coastal Greens: Sea Celery, Sea Blite, Barilla Bower Spinach and Karkalla.

Flavour: Intense, fresh mint flavour

Applications: A great substitute to traditional European mints in a wide variety of sweet and savoury dishes.

Complements: Red meats, kangaroo, eggplant, mustards, nuts, chilli, tomato and olive oil.

Trends: Dan Hong executive chef of Sydney's Mr Wong, Ms G's and El Loco restaurants is serving up Vietnamese-style steak tartare with native round leaf mint.

Restaurant-MerneThe Flowerdale staff love their food - and it's always such a thrill to find our products on the menu when we go out to dinner.  This week Lily was out at Merne at Lighthouse on the Bellarine Peninsula.  Merne were The State Winner of the 2017 Golden Plate Award.  Congratulations Guys!  This gorgeous dish by Chef Josh Smith was truly scrumptious!

Seasonal Product: Jerusalem Artichoke Flowers

Jerusalem Artichoke FlowersFlowerdale Farm currently has seasonal Jerusalem Artichoke Flowers available through the Glenora Heritage Produce range.

Native to North America, Jerusalem Artichokes are a species of sunflower. The tubers are commonly cooked in much the same way as potatoes, but the flowers of Jerusalem Artichokes are also edible.

The bright yellow flower heads grow up to 5cm in diameter and contain 8 to 20 outer yellow petals (ray flowers) that enclose the dark yellowish-brown centre. Jerusalem Artichoke Flowers have a unique bittersweet taste which can be used to contrast and complement sweeter flavours in your dish.

Separate the petals and scatter through salads and sweet dishes or use as an attractive and colourful autumn garnish with bite. Jerusalem Artichoke Flowers also make an interesting herbal tea.

Jerusalem Artichoke Flowers will be in season for the next month and available by the punnet. The Jerusalem Artichoke Root season will commence from mid-April. All Glenora products are picked to order so please ensure orders are received to Flowerdale Farm by 8am each Tuesday or Friday.
