Appearance: Pale firm stems with vibrant green leafy sprout
Flavour: A full pea, grassy flavouring
Applications: Snowpea shoots provided a crisp texture and fresh flavour to a wide range of savoury dishes. Popular in Asian fusion, they add great dimension to rice paper rolls, stir-fries, salads, as well as breakfasts and brunches.
Complements: Salmon, egg, beef, rice, cheese, bacon, citrus, fennel, garlic, vinegar, walnuts, almonds, sourdough, basil, coriander, chilli and ginger.

Appearance: Pretty, feathery leaves on either side of a firm stem
Flavour: Fresh and crisp with mild nutty flavour similar to chickpeas.
Applications: A popular ingredient in breakfast and brunches. Frequently used in Indian cuisine. A great garnish for a range of savoury meals.
Complements: Egg, bacon, smoked salmon or trout, red meat, pork, asparagus, avocado, roasted or sautéed vegetables, salad greens, curries, chilli and coriander.
