New Seasonal Products: Savoury Edible Flowers

With Spring upon us now is the time to enjoy the seasonal range of Savoury Edible Flowers currently available through the Glenora Heritage Produce Collection. Savory varieties available this year include Broad Bean Flowers, Brassica Flowers, Rocket Flowers and Chive Flowers.

Broad Bean Flowers are available in both white and crimson and possess a strong, sweet, green pea flavour. Broad Bean Flowers are best used whole and have a surprising crunch in the flower kernel. Use them as an ingredient in salads and savoury dishes such as couscous and pilaf or as a flavoursome garnish for meat dishes.

Brassica Flowers are dainty yellow blooms with distinctively strong, peppery, sometimes bitter character. They are a perfect garnish to add a peppery hit to pasta, rice and egg dishes and combine well with red and white meats. Brassica Flowers can also be used as a flavouring ingredient to create creative savoury sauces.

Rocket Flowers are the bloom of the popular salad green Rocket. This element of the plant, in contrast to the leaves, has a distinct nutty flavour. Delicate in appearance, Rocket Flowers have 4 wing-shaped cream petals, textured with dark veins. They are a tasty addition for pâté, terrines, soft cheeses and hors d'oeuvres. Or a great garnish for red meat dishes, soups and frittata.

Chive Flowers are striking round purple blooms with a profusion of tiny petals. One of the best ways to use this bloom is to pull the flower heads apart and scatter the petals over savoury dishes to add a delicate onion flavour. Chive Flowers add great flavour and finish to soups, cream sauces, potatoes and egg dishes.

Broad Bean Flowers, Brassica Flowers and Rocket Flowers are all currently available by the bunch and are in very good supply. Chive Flowers will become available in the coming weeks and will bloom throughout spring and early summer. All Glenora products are picked to order so please ensure orders are received to Flowerdale Farm by 8am each Tuesday or Friday.
