New Product: Saltbush

SaltbushSaltbush is a new Australian Native product now available from Flowerdale Farm. Native to the dry areas of inland Australia, Saltbush has large blue-grey leaves with a salty, slightly bitter flavour. Fresh or blanched Saltbush leaves can be used as a wrap around meat and seafood, imbuing the protein with unique flavour when steamed or grilled. They can also be used to add a savoury flavour to salads or as a leafy bed for grilled meat or vegetables. They are an excellent salt substitute and can be dried and ground into flavoursome rubs and dukkha. In this form that are a great addition to breads, savoury pastries, pasta and risotto. Flowerdale Farm Saltbush leaves are available year round in 70g punnets.

Located at Australian Global Marketing, Store A56-57 with Alex and Matthew Helou, the Stand stocks all your favourite Flowerdale Farm lines including Foliette, Edible Flowers, Microgreens, Australian Natives and Petite Veg.

James and Lily Rattray are currently in Sydney assisting with the launch and meeting chefs and wholesale clients. Please feel free to drop by and say hello. They would love to show you our new Foliette range which has been inspired by a French fashion for larger, wild-foraged leaves.

Petite Foraged Salad is a seasonal mix of our best Foliette edible leaves and flowers. Expect a variety of leaf and flower colours and textures and a flavour profile which ranges from fresh to zesty. Create an individual look for each plate with this sophisticated collection of bespoke leaves and blooms.

Petite Salad Burnet is a member of the rose (Rosaceae) family which offers a clean, cucumber-like flavour. This attractive leaf has a rounded shape with toothed edges. Use Petite Salad Burnet as an alternative to Borage flowers in sweet or savoury applications.

Petite Begonia Leaf is a glossy vibrant green leaf with a crisp texture and an intense juicy lemon flavour. The leaf has a lightly serrated edge and a gentle blush colouring on the underside with delicate red veins. It pairs well with dairy based flavours including sour cream and cream cheese and can be used to contrast and complement fish and meat dishes.
