New Product: Mini Coloured Cauliflowers

Mini Coloured CauliflowerMini Coloured Cauliflowers are a new product now available from the Flowerdale Farm stand at the Melbourne Wholesale Market.  These vibrant vegetables are the results of traditional selective breeding of heirloom varieties. 

They retain their brilliant colour even after cooking and are higher in antioxidants than regular white cauliflower.  Purple cauliflower gets its beautiful hue from the presence of the antioxidant anthocyanin, which is also found in red cabbage, purple carrots and red wine.  Orange cauliflower varieties, on the other hand, get their bright colours from carotenoids, with studies showing these varieties have up to 25 times the concentrations of beta carotene then in white cauliflowers.

Mini colored cauliflowers have the same firmness, crumbly florets, and texture as their white counterpart, with subtle differences in taste.  Their flavour is slightly milder, sweeter, nuttier and free of the bitterness sometimes found in white cauliflower.

Mini coloured cauliflowers can be prepared in the same manner as white cauliflower, however we recommend using the vibrant colours as a visual counterpoint to create a point of interest in dishes. Consider creating colourful cauliflower fritters, roasted cauliflower or coloured cauliflower soup.  You can also blitz into colourful cauliflower ‘rice’, serve raw on fresh veggie platters or create coloured cauliflower puree for brilliant plate presentation.

Mini coloured cauliflowers are currently available wholesale in trays of 12 in purple, white and green.  The orange variety is still maturing, but will also be available soon.

 

New Seasonal Product: Wild Harvest Nettle Tips

nettle-tipsNettle Tips are a new seasonal product available from Flowerdale Farm from the Glenora Heritage Produce range. Wild harvested, they are regarded as a superfood which is rich in iron, calcium, magnesium, vitamins A, C, K and protein.

Nettles are very versatile and can be treated like any fresh greens such as kale, chard, or spinach. Delicious when blanched, you can also add nettle tips to soup, steam them and serve with butter and lemon or toss them raw into your morning smoothie.

Nettle tea is another popular use and is said to help several ailments including eczema, asthma, hay fever and muscle aches and pains.

These young and supple nettle tips have no woody stalk, so they don't need to be stripped – the whole nettle can be used with no labour or wastage. Glenora nettle tips are picked to order and available wholesale in 1.5kg boxes. Please ensure orders are received to Flowerdale Farm by 8am each Tuesday.

New Product: Zucchini Flowers

zucchini-flowersZucchini Flowers are a new product now available from Flowerdale Farm. These delicate blossoms have a subtle zucchini flavour and a soft, velvety texture.

Zucchinis produce both a male and female flower – the flower attached to the immature vegetable is the female, whilst the large bloom on the long stalk is the male. Both flower varieties are frequently used for cooking.

Zucchini Flowers are incredibly versatile and can be baked, fried, stuffed, steamed or enjoyed raw in salads. They can also be added to soups, omelettes, stir-fries or curries. Popular stuffings for zucchini flowers include herbs and cheese, rice, ricotta or minced meat.

Flowerdale Farm Zucchini Flowers are grown locally on the pristine Bellarine peninsular, within 100km of Melbourne. Flowerdale Farm on MasterchefFlowerdale Farm's premium edible flowers were recently showcased on MasterChef Australia as the theme ingredient for the innovation challenge. We loved seeing our hand-picked edible blooms celebrated as the hero ingredient and imbuing the dishes with unique flavour, aroma, colour and texture. Great to see Aussie chefs developing a deeper understanding for the endless applications of edible flowers as more than just a garnish.
