Dubai World Hospitality Championships

Last month the Australian culinary team ventured to The Middle East to compete in the Dubai World Hospitality Championships. The world class culinary contest consisted of teams from 11 continents. The requirements of the competition were to design a cold buffet table and a live hot kitchen in front of an audience of thousands at the Dubai World Trade Centre.

The Australian Team, headed by Shannon Kellam, performed astoundingly, achieving gold in the live hot kitchen with the rare score of 97 points of 100. They received silver in the cold buffet, and an overall score of 180 points, placing 3rd in the world.

On Monday 25^th November, ABC radio national interviewed a team from Flowerdale Farm about the rising interest in edible flowers.  In the 20 minute radio interview Flowerdale Farm general manager James Rattray, edible flower grower Lauren Richardson and Pierrick Boyer, Head Pastry Chef at Le Petit Gateau discussed popular edible flower varieties, their flavours and culinary applications in addition to the challenges of growing them.

To celebrate Good Food Month, David Jones producers and food experts have been presenting gourmet food seminars, cooking classes and tastings.  Throughout November Flowerdale Farm presented delicious demonstrations on incorporating Edible Leaves and Micro Herbs into Everyday Cooking.  These unique events allowed attendees to sample many of the beautiful flower and micro herb varieties and experience first-hand the flavour and appeal they add to dishes and drinks.
